This is a Greek inspired twist on stuffed peppers. It makes for a great appetizer or even side dish. Great for vegetarians too! Total prep time is about 15 minutes, and it takes about 30 minutes to cook.

This is a great tasting, and reasonably healthy appetizer, especially for dinner parties. These take about 10 minutes to prep, and requires no cooking. Easy to make, and easy to eat!

This is a great, warm and filling soup to fight the frigidness of winter! It has complex carbohydrates, is low in fat, and is a good source of fiber and protein, because of the mix of lentils, chickpeas, and greek yogurt. There’s no meat, so it’s even vegetarian! The best part…its easy to make, and only takes about 30 min to prep and cook!
