Ingredients
Serves 2
2 large eggs, plus an additional 4 egg whites
2 cups baby spinach
2 Tbsp olive oil
1/2 cup reduced fat crumbled feta
Preparation
- Whisk together eggs, spinach, and crumbled feta.
- Coat a pan with the olive oil, and heat pan on a low/medium heat. Add mixture and cook for approximately 2 minutes per side. Enjoy with a slice of whole grain toast and a serving of fruit!
