Spinach & Feta Omelet

An easy-to-make greek inspired omelet, that’s healthy & delicious!  Just 5 minutes to prep and 5 minutes to cook.


Serves 2

2 large eggs, plus an additional 4 egg whites

2 cups baby spinach

2 Tbsp olive oil

1/2 cup reduced fat crumbled feta


  1. Whisk together eggs, spinach, and crumbled feta.
  2. Coat a pan with the olive oil, and heat pan on a low/medium heat.  Add mixture and cook for approximately 2 minutes per side.  Enjoy with a slice of whole grain toast and a serving of fruit!

 Nutrition Per Serving

 254 calories, 20g of protein, 4g of carbohydrates, 15g of fat, 2g of fiber, 500mg of sodium
