Sweet-Zing Chicken

A healthy and tasty chicken recipe.  10 minutes to prep and 30 minutes to cook.  Healthy dinner in under an hour. A little sweet, a little zingy, a whole lot of delicious!  All with just 5 ingredients!


Serves 4

4 chicken breast fillets(skinless), about 5oz each
1 large lemon, along with 2oz of lemon juice
2 tsp dried thyme
1½ tbsp golden honey
16oz bag of broccoli florets


  1. Preheat your oven to 350 degrees and lightly coat a shallow heatproof dishwith about 2oz of lemon juice (fresh squeezed or from a bottle, up to you).  Put the chicken in the dish, and season with a pinch of salt and pepper.  Bake for 10 minutes.  While the chicken is baking, cut four thin slices from the lemon.
  2. Take the chicken out of the oven, turn the fillets over and put a slice of lemon on top of each one.  Sprinkle over the thyme and another pinch of salt and pepper, then drizzle the four chicken breasts with the honey. Squeeze over the juice from the remaining lemon.  Return to the oven for 20 minutes more, until the chicken is cooked all the way through.  Steam the broccoli in a pot with about 1/2 cup of water for aprox. 4-5 minutes.  Remember to take the broccoli off the steam before it loses its vibrant green color.  Serve the chicken and the sticky juices along with the broccoli, making sure to spoon some of the sweet zingy juice over the broccoli.
