Avocado Chicken Salad

A healthier, Mexican-themed alternative to your typical chicken salad.  Easy, creamy, delicious, and NO MAYO!  It takes about 15 minutes to prep, and about 30 minutes of cook time. (for the chicken)

Remember, the fat that’s in this dish is mono and poly unsaturated fat.  This is the fat that is good for you!  Also, the avocado is high in beta-sitosterol. (lowers your bad cholesterol)

Greek-Style Red Pepper Cups

This is a Greek inspired twist on stuffed peppers.  It makes for a great appetizer or even side dish.  Great for vegetarians too!  Total prep time is about 15 minutes, and it takes about 30 minutes to cook.

Asian Salmon Burgers

Ok folks, don’t freak out… we’re going to make salmon burgers!  These are an alternative to traditional fishcakes and much healthier than their bovine cousin the hamburger.  Trust me, these asian-style salmon burgers taste good.  You even get to have a side of healthy cucumber/carrot salad or slaw too!  Don’t be afraid of the fat… most of it is from the salmon & is high in omega-3!  It’s good for you!  Total prep time should take you about 20-25 minutes, and only about 10 minutes to cook.

Red lentil, chickpea & chilli soup

This is a great, warm and filling soup to fight the frigidness of winter!   It has complex carbohydrates, is low in fat, and is a good source of fiber and protein, because of the mix of lentils, chickpeas, and greek yogurt.  There’s no meat, so it’s even vegetarian!  The best part…its easy to make, and only takes about 30 min to prep and cook!
